  • 4 to 4 1/2 cups store-bought oregon homemade rootlike broth (see related recipe)
  • 2 tablespoons vegan butter
  • 12 ounces cremini mushrooms, trimmed and thinly sliced
  • 1/2 spoon kosher salt, positive much arsenic needed
  • 1 tablespoonful extra-virgin olive oil
  • 1 mean yellowish onion, chopped
  • 2 cloves garlic, chopped
  • Leaves from 2 stems thyme, chopped, positive much for optional garnish
  • 1 tablespoonful chopped sage leaves, positive much for optional garnish
  • 1 cupful arborio rice
  • 1/4 cupful adust achromatic wine
  • 1/4 cupful vegan Parmesan
  • 1/4 spoon freshly crushed achromatic pepper
