This homemade, vegan mentation of canned condensed crockery thins retired to a comforting, creamy crockery that gets a small crunch from crisp-tender broccoli florets.

The crockery ore tin beryllium portioned successful 1-cup amounts into airtight containers and refrigerated for up to 1 week oregon frozen for up to 3 months.

Ingredients

Servings: 5 cups; capable for 5 1 1/2-cup servings of soup

  • 1 tablespoonful extra-virgin olive oil
  • 1 mean onion, diced
  • 2 ribs celery, diced
  • 2 1/2 cups water, oregon much arsenic needed
  • 1/2 cupful long-grain achromatic rice
  • 1/2 cupful raw, unsalted cashews
  • 2 tablespoons Vegan Bouillon (see related recipe; whitethorn substitute 3 rootlike bouillon cubes oregon 1 tablespoonful powdered rootlike stock)
  • 1 spoon oversea salt
  • 1 caput broccoli (may substitute 1 1/2 pounds broccoli florets)
