This look predates my kids. It’s 1 of their favourite summertime dinners. I sometimes substitute pan-fried tofu for the shredded chicken, turning it into a wholly vegan dish, though nary little substantial.

To drink: a French Riesling from Alsace.

Ingredients

  • 1/2 cupful tahini (sesame paste)
  • 1/4 cupful regular oregon low-sodium creamy peanut butter
  • 3 tablespoons low-sodium soy sauce
  • 3 tablespoons atom vinegar oregon pome cider vinegar
  • 2 tablespoons sugar
  • 1 ample clove garlic, minced
  • 1 tablespoonful minced oregon finely grated caller ginger root
  • 2 teaspoons toasted sesame oil
  • 1/4 spoon sambal oelek (chili paste)
  • 1/2 cupful to 3/4 cupful water
  • Salt (for the cooking water)
  • 1 lb dried spaghetti oregon spaghettini
  • 1 ample cucumber, peeled, chopped successful half, seeded and chopped into half-moon slices
  • 1 cupful thinly sliced scallions (white and light-green parts)
  • 1 ample carrot, trimmed, peeled and shredded
  • 8 ounces cooked skinless chickenhearted breast, shredded
