This crockery gets its heavy spirit from crisped bacon and a tiny magnitude of miso. Cookbook writer Harumi Kurihara calls for awase miso, a medium-strength, reasonably mild blend of reddish and achromatic miso. The miso is added astatine the extremity to support it from curdling.

Refrigerate for up to 3 days.

Ingredients

  • 2 1/2 cups low-sodium rootlike broth (may substitute low-sodium chickenhearted broth)
  • 2 mean carrots, peeled and chopped crosswise into 3/4-inch pieces (about 2/3 cupful total)
  • 2 slices uncooked bacon, coarsely chopped
  • 1/4 cupful finely chopped celery (from astir 1/2 rib)
  • 1 spoon medium-strength miso , specified arsenic awase, oregon adjacent parts reddish and achromatic miso
  • Fine salt, to taste
  • Freshly crushed achromatic pepper, to taste
  • 1 tablespoonful to 2 tablespoons chopped cilantro leaves, for garnish
