Servings: 32 Makes 2 4 1/2-by-8 1/2-inch loaves

  • 2 1/2 cups aureate raisins
  • 1 cupful dried unsulphured unsweetened apricots, chopped into quarters (about 7 ounces)
  • 1 cupful chopped crystallized ginger
  • 2 3/4 cups all-purpose oregon barroom flour
  • 16 tablespoons (2 sticks) unsalted butter, astatine country temperature
  • 1 cupful sugar
  • 5 ample eggs
  • 1 tablespoonful vanilla extract
  • 1 spoon almond extract
  • 1 spoon citrus extract
  • 1 spoon baking powder
  • 1/2 spoon salt
  • 2 teaspoons finely grated orangish zest
  • 2 teaspoons finely grated citrus zest
  • 2 cups chopped pecans, toasted and cooled (see NOTE)
