This crowd-size look comes courtesy of Williamsburg, Va., nonmigratory Janice Canaday, who is simply a humanities interpreter, caterer and avid location cook. She was selected arsenic a contented bearer of Virginia foodways for the 2007 Smithsonian Folklife Festival successful Washington.

Ingredients

Servings: 10-14 (makes 11 cups)

  • 3 pounds yellowish oregon achromatic potatoes, peeled and chopped into 3/4-inch cubes
  • 1 1/2 teaspoons salt, positive much arsenic needed
  • 2 cups Hellmann's mayonnaise
  • 1 cupful Mt. Olive No Sugar Added Sweet Relish
  • 4 ribs celery, chopped into tiny dice (about 2 cups)
  • 4 ample hard-cooked eggs, chopped into tiny dice (or crumbled; spot NOTE)
  • 1 ample saccharine onion, chopped into tiny dice (1 1/2 cups to 2 cups)
  • 1 mean greenish doorbell pepper, stemmed, seeded and chopped into tiny dice (about 1 cup)
  • 3 to 5 tiny mixed saccharine peppers (yellow, orangish and red), stemmed, seeded and chopped into tiny dice (1/2 cupful total)
  • 2 tablespoons French's yellowish mustard
  • 1 1/2 teaspoons celery seed
  • 1/2 spoon dried dill
