This crockery goes unneurotic rapidly and is 1 of cook Gerry Garvin's favorites. The flimsy wound of shallot and ail added to the filling substance provides a bully surprise.

Ingredients

Servings: 2 dozen ravioli

For the ravioli

  • 1 cupful cooked chickenhearted breast, finely diced
  • 3 teaspoons extra-virgin olive oil
  • 1/2 cupful shiitake mushrooms, stemmed
  • 2 tablespoons goat cheese, positive much for garnish (optional)
  • 1 tablespoonful finely chopped garlic
  • 1 tablespoonful finely chopped shallots
  • Salt
  • Freshly crushed achromatic pepper
  • 1 bundle won ton wrappers, kept covered with damp insubstantial towels
  • 1/2 cupful to 1 cupful cornstarch, for dusting the enactment surface
  • 1 ample egg
  • 1/4 cupful dense cream

For the sauce

  • 4 tablespoons olive oil
  • 1 tablespoonful finely chopped garlic
  • 1 tablespoonful finely chopped shallots
  • 1 1/2 cups Roma tomatoes, diced
  • 2 full canned plum tomatoes
  • 1 leafage basil, positive much for garnish (optional)
  • 1/2 cupful achromatic wine
  • 1 spoon salt
  • 1 spoon freshly crushed achromatic pepper, positive much for garnish
  • 1 spoon finely chopped flat-leaf parsley
  • 2 teaspoons to 3 teaspoons unsalted butter
