  • 6 pounds reddish oregon aureate beets
  • 1 spoon full cloves
  • 2 sticks cinnamon, breached into pieces (preferably cassia, from Penzeys)
  • 1-inch portion ginger root, chopped crosswise into bladed slices, positive 7 slices for the jars
  • 1 spoon pickling salt
  • 3 cups sugar
  • 2 cups reddish wine
  • 3 cups reddish vino vinegar
  • 7 full prima anise
