Grilled Sea Bass With Cilantro-Mint Sauce

The cilantro-mint condiment does double-duty: It flavors the oversea bass anterior to grilling, and the remainder is spooned connected apical afterwards.

This look originated with personage cook Wolfgang Puck, who served the cilantro-mint condiment with lamb chops. We tin attest that they're a large combination. If making with lamb, usage 6-ounce rib chops that are 3/4 inch heavy and grill connected medium-high for 5 to 7 minutes per side. Allow 2 chops per serving.

Serve with atom pilaf.

  • 2 teaspoons ginger root, peeled and astir chopped
  • 1/4 cupful packed mint leaves, positive much for garnish
  • 1/4 cupful packed cilantro, stemmed, positive much for garnish
  • 1 tablespoonful honey
  • 1/4 cupful atom vino vinegar
  • 1/2 cupful canola oil
  • Salt
  • Freshly crushed achromatic pepper
  • 4 (24 ounces) oversea bass fillets
