In her cookbook “My Vermont Table,” cook Gesine Bullock-Prado calls these Deviled Ham Sammies and describes the look arsenic “part ham sandwich, portion Vermont pimiento food spread.” We ate it arsenic a sandwich, but besides enjoyed it connected crackers and scooped into lettuce leaves. Bullock-Prado recommends adding pickled reddish onions (see related recipe), but we tried it with thinly sliced earthy ones, too, and thought either mode was delicious. The dispersed is affluent and creamy – if you privation to chopped that richness, see replacing the pick food with Greek yogurt for a small tang.

Refrigerate for up to 4 days.

Ingredients

  • 1/2 cupful (4 ounces) pick food (may substitute 1/4 cupful positive 1 tablespoonful (2 1/2 ounces) Greek yogurt)
  • 1/2 cupful (2 ounces) finely grated crisp cheddar cheese, preferably Vermont cheddar (see NOTE)
  • 1 tablespoonful mayonnaise
  • 1 spoon stone-ground mustard, positive much to taste
  • 4 ounces thinly sliced deli ham, coarsely chopped
  • 2 tablespoons chopped pimiento
  • Fine salt
  • Freshly cracked capsicum (optional)
  • 1/4 cupful pickled reddish onions oregon thinly sliced reddish onion
  • 4 slices bread, preferably oat, lightly toasted
  • 4 ample food lettuce leaves
