  • 1 7-ounce tin chipotle chile peppers successful adobo, preferably La Preferida brand, pureed
  • 1/4 cupful soy sauce
  • 3 ounces pineapple juice
  • 1/4 cupful reddish vino vinegar

For the wings

  • 3 pounds skin-on, bone-in fryer chickenhearted wings
  • 2 cups flour
  • 2 tablespoons crushed cumin
  • 2 teaspoons cayenne pepper
  • 2 teaspoons achromatic pepper
  • 2 teaspoons achiote powder, spot TIP below
  • 2 teaspoons ail powder
  • 2 cups to 4 cups canola oil, for frying
